  • Blender
  • 1-liter Jug
  • Bowls
  • Strainer
  • 900 gm whole milk (fresh cow or buffalo milk)
  • 4 tbsp Yogurt ((stems removed))
  • .1 tsp pinch of salt
  • .1 tsp pinch of turmeric ((room temperature))
  • 1-liter ice cold water
  1.      Boil fresh milk and let it cool completely until cream forms at the top.

  2.      Collect the cream in a container/close the lid and store it in the freezer.

  3.      In the same way, collect the cream for the next few weeks till the desired amount of cream is collected.

  4.      Take out collected cream from the freezer and let it come to room temperature.

  5.      Transfer all the cream to a clean bowl.

  6.      The cream should not be cold before adding curd.

  7.      Now take 04 TBSP of normal temperature curd and add/mix it in the cream.

  8.      Cover and keep the cream out for at least 06 hrs. (in winters double the time to 12 hrs. as it takes more time to set in cold weather).

  9.      After 06 hrs. when the cream has set, take it out pour half the amount in the blender jug.

  10.      Add a pinch of salt and turmeric powder.

  11.      Blend for 1-2 minutes.

  12.      Now pour chilled ice-cold water and blend again for a few more seconds until the butter separates.

  13.      When the butter gets visible strain it (in a strainer/channi) and collect buttermilk (lassi) underneath.

  14.      Add ice-cold water again little by little so that the butter becomes firm.

  15.      Squeeze-out excess water from extracted butter.

  16.      In the same way, repeat the process with the other half of the cream.

  17.      The collected buttermilk can be used later for kneading dough for Rotti/Paratha.

  18.      Collect prepared butter in a container or mold and shape it.

  19.      This butter stays fresh in the refrigerator for weeks
